Fire Keeper is a character in the game Dark Souls III.

A character who is always waiting for you in the temple of fire. It is able to raise the player's level. All fire keepers are blind. The keeper of the Fire says that it is forbidden for the keepers to have eyesight, as they will see a world of betrayal, a world without fire.
However, the Guardian still has eyes.

After the transfer of her eyes, the musical theme playing in the Temple of Fire will change. If you kill her and bring her eyes back, the music will change to the same.

From the description of the key that opens access to the tower behind the temple, we learn that these are former guardians who were "given" eternal rest for their service after fulfilling their duty. It is possible that the Master of the Sword is an executioner who kills the Guardians who have fulfilled their duty.
After giving her the eyes, whether you choose "Wish for a world without fire" or "Give up", you can kill her later and change the choice. But in any case, she will still appear in the Furnace of the First Flame, this choice only affects the dialogues.
There was a similar character in Demon's Souls, a Maiden in Black. Like the Guardian, she was blind, could use the souls collected by the chosen one to raise his level, and was reborn after death. Some of the phrases of the Guardian are a direct quote from the words of Virgo. The endings of the women are also related: Virgo could also be killed with a stab in the back, walk over her head and thereby change the fate of the world. The only difference is that killing a Virgo leads to a "bad" ending.
As you level up, you can hear the Guardian reading a prayer over you, who are bowed before her.
If you look closely, you can see bruises (blood) and burns on her fingers, which leads to many assumptions (the guardians of the fire were tortured, the consequences of rebirth after her murder, and much more). It can also be the consequences of her interaction with the flame when caring for bonfires.
After being transferred to her, the guardian's eye receives a new animation - sometimes she can be found examining her crippled hands. It stops doing that if you kill it and take the eyes back.
After handing her the eyes, completing Yuri's quest, and choosing the "wish for a world without fire" dialog, she will ask you to summon her on the day of your betrayal so that she will still try to keep the fire burning. She asks you to kill her and take her eyes, so that she can return as her former guardian without eyes if you change your mind.
